Creamed Spinach Polenta

Healthy side dish with spinach and polenta

  1. Melt butter in a saucepan over medium-high heat. Add garlic and spinach. Cook, stirring, for 3 minutes or until spinach has wilted. Stir in cream. Simmer for 2 minutes. Transfer to a bowl.
  2. Add stock and 2 cups cold water to saucepan. Cover. Bring to the boil over high heat. Add polenta. Reduce heat to low. Cook, stirring constantly, for 5 to 7 minutes or until polenta is thick.
  3. Return spinach mixture to pan. Add cheese. Season with salt and pepper. Stir to combine. Serve.
